Vegan Mashed Sweet Potatoes Recipe
This plant-based recipe is quick and easy, and you might have known it your entire life. However, I think it’s necessary to make sure you know how to swap non-vegan ingredients for vegan ones, even in the most basic of recipes. As this blog is thought for the rookies, as well as for the ‘experts’, I’ll make sure to cover the easiest recipes, and also more complex ones.
Sweet potatoes are super nutritious carbs that can be used in many dishes and ate in many different ways. They have the same versatility as potatoes (and plants in general, really). You can boil them, bake them, fry them–you name it. It’s one of my favorite foods to make a delicious vegan meal. This time, I’ll tell you how to mash them! Here’s my recipe for vegan mashed sweet potatoes:

It can be difficult for me to write a recipe of what I usually cook, because I don’t follow instructions or measure quantities. I mostly invent recipes on the go. For other things that demand more detailed measurements, like baking, I’m a bit more careful and at most I will replace or add one or two ingredients, depending on what I have at home and what I’m craving.
You can do the same with the recipes I post here. Let them be a guide, not an imposition. For example, you could use olive oil instead of vegan butter, if that’s what you prefer. In that case, replace 3/4 of the butter with oil. I used soy milk (sometimes I use oat), but you can try it with any kind of vegan milk! Also, you can get creative with optional ingredients: throw in some maple syrup, nutritional yeast, cinnamon, or anything you like in your mashed sweet potatoes.
Cut the sweet potatoes in any shape. The smaller the bits, the faster they will be cooked. I don’t peel them, because its skin has so many benefits! Did you know that they are a great source of Vitamin A, C and E, iron, potassium, antioxidants, fiber, among other nutrients? Peeling them would be such a waste! Just make sure to wash them before you cut them.
Put the cut sweet potatoes in boiling water. You will know when they’re ready to be drained, when you prick them with a fork with no effort.
Strain the sweet potatoes in a bowl, to make sure you save the water to water your plants! This starchy water will help your plants thrive, and you will also be saving water (which we all know is scarce).
Start mashing the sweet potatoes, while you add all other ingredients little by little. It’s particularly important that you are careful with the plant milk, because if you accidentally add to much of it, you will get a soup instead of mashed sweet potatoes, and there’s no going back (unless you add even more sweet potatoes!).
I hope you enjoy this plant-based mashed sweet potatoes recipe. It’s easy and it’s a great vegan recipe for dinner.
